Olivar represents the pinnacle of Cesconi's wine quality, a refined blend of Pinot Blanc, Chardonnay and Pinot Grigio. But this wine is much more than a simple oenological masterpiece: it is a tribute to the vineyard of the same name, acquired by the family at the beginning of the nineteenth century and already dominated by a majestic centuries-old olive tree.

This vineyard, in a perfect symbiosis between vine and olive tree, offers a temperate environment protected from cold winds. It has always been the first to wake up in spring and over the decades it has consistently produced the company's finest wines.

Olivar embodies the legacy of generations of dedication to the land and the art of winemaking, offering an authentic and superlative expression of the region's terroir.

Tasting notes

Straw yellow in color with greenish reflections. On the nose it is fruity with notes of peach, fig and apricot, floral with hints of elderflower. On the palate it is mineral, savory and persistent.

Pairings

Try it in combination with a plate of paccheri, cuttlefish and clams.

Production method

The different varieties have slightly different ripening times which require separate harvesting. The hand-harvested grapes are pressed and macerated for a few hours before being pressed in the absence of oxygen. The must does not undergo any addition and is decanted for 12 hours before being sent to fermentation. It ferments in large oak barrels and in barriques where it remains for approximately ten months; the different varieties are carefully assembled after this period and bottling usually takes place 18 months after the harvest.
