Madame Martis Cuvée was born in 1999, with the desire to create something unique. Few pieces produced only in the best vintages with long aging on the yeasts and a careful selection of the grapes, combining the elegance of Pinot Noir with the fragrance of Chardonnay and the softness of Meunier. The limited edition with dégorgement tardif vintage 2010 is the second edition of this project, also produced in 400 rare collector's pieces.

Tasting notes

Straw yellow with golden reflections, fine and very persistent perlage. Fruity aroma of exotic fruit and citrus fruits, which leaves room for aromas of flowers and pastries, fragrant note of toasted bread. On the palate it is mineral and extremely soft, with a marked flavor, creamy and balanced.

Pairings

Ideal to accompany seafood crudities and fish-based menus.

Production method

A hand harvest is carried out which is immediately followed by a soft pressing of the whole Pinot Noir, Chardonnay and Meunier grapes, processed separately. Pinot Noir and Meunier are vinified only in steel while the Chardonnay must ferments and ages in barriques for about 8 months before drafting. The careful preparation of the cuvée then takes place and the subsequent bottling with the addition of selected yeasts. After remaining on the yeasts for 11 years, the remuage is carried out and then the disgorgement is carried out without the addition of the liqueur d'expedition and subsequent packaging. After about a year in the cellar it will be put on the market in October 2023.
