Francesco Poli is a wine producer who continues a centuries-old tradition linked to the production of Vino Santo Trentino. As a member of the Vino Santo Trentino DOC Association, Poli is passionately committed to protecting this unique wine, which is produced exclusively in the Valle dei Laghi. The territory and the microclimate of the valley, influenced by the breeze from Lake Garda, allow the perfect drying of the Nosiola grapes. The history of Vino Santo Trentino is ancient, a mixture of cultural and climatic traditions that give life to an exceptional product, characterised by a long process of natural drying of the grapes until Holy Week, when they are finally pressed. Vino Santo Trentino is also a Slow Food Presidium, a prestigious recognition that certifies its uniqueness and sustainability.

Tasting notes

Vino Santo Trentino "Nobles" 2006 has an intense golden color, almost amber. On the nose, it expresses complex aromas of dried fruit, figs, honey and candied citrus fruits. On the palate, a balanced sweetness and a vibrant acidity are perceived that give the wine freshness, elegance and a long persistence. The rich and creamy structure makes it an enveloping and harmonious passito.

Pairings

Vino Santo Trentino pairs perfectly with traditional desserts such as apple strudel, dry biscuits or sweet focaccia. It is particularly excellent with blue cheeses such as Gorgonzola or Roquefort, where the sweetness of the wine balances the intensity and flavour of the cheese, creating a complex and harmonious taste experience. It can also be enjoyed on its own as a meditation wine, appreciating its nuances and aromatic depth.

Production method

Francesco Poli's Vino Santo Trentino "Nobles" 2006 follows a traditional and highly specialised production method. The Nosiola grapes are harvested by hand in the first half of October, selecting only the loosest and healthiest bunches with perfect ripeness. These bunches are then placed on racks, the typical aréle, in a drying room. Here, thanks to the breeze from Lake Garda, called Ora del Garda, the grapes dry for over 5 months. During this long process the noble rot "botrytis cinerea" develops, which gives the wine complexity and aromatic richness.
At the end of the drying process, the grapes are pressed and the must, characterised by a very high sugar content, ferments in stainless steel tanks. After a first ageing, the wine is transferred to small oak and acacia barrels where it rests and matures for at least 10 years, acquiring depth, structure and complex aromas. This long refinement helps to create a wine with unique characteristics, with a sweetness balanced by a lively acidity and great aromatic persistence.
