Cantina Rotaliana in Mezzolombardo, in the heart of the Piana Rotaliana, is one of the most prestigious winemaking realities in Trentino. Founded in 1931, the winery combines tradition and innovation, thanks to the commitment of its over 300 contributing members who cultivate approximately 450 hectares of vineyards. The Piana Rotaliana is known for its gravelly and alluvial soils, kissed by the sun during the day and refreshed by Alpine breezes at night, perfect conditions for growing Cabernet Sauvignon, a grape variety that acquires a complex structure and intense aromas here. The Trentino DOC Cabernet Sauvignon 2022 is a wine with great personality, which tells the story of the passion of a territory and the artisanal care that distinguishes Cantina Rotaliana.

Tasting notes

This Cabernet Sauvignon pairs beautifully with red meats such as steaks or braised meats and with game, such as venison or stewed wild boar. It is also perfect with aged cheeses such as Trentingrana or a long-matured Pecorino. Ideal with rich first courses, such as pappardelle with wild boar ragù, or with a mixed grill of meat to enhance its complexity and structure.

Pairings

This Merlot pairs beautifully with grilled red meats, roasts and stews, such as beef stew with vegetables. Excellent with dishes based on porcini mushrooms, such as risotto or tagliatelle with mushroom ragù. It also pairs perfectly with semi-mature cheeses or a platter of Trentino cured meats, for a rich and tasty tasting.

Production method

The Cabernet Sauvignon grapes are harvested by hand and carefully selected. After a delicate destemming and pressing, fermentation takes place in steel tanks at a controlled temperature, to preserve the primary aromas of the vine. Part of the wine then ages in small oak barrels for 4-5 months, where it develops its intense character and spicy notes, before being refined in the bottle to achieve elegance and harmony.
