Novacella Abbey, founded in 1142, is one of the oldest and most prestigious wine producers in South Tyrol, located in Varna, near Bressanone. The Moscato Rosa “Praepositus” represents the excellence of this historic winery, with grapes coming from selected vineyards located in the best exposures. The combination of tradition and innovation allows to produce wines that reflect the uniqueness of the South Tyrol terroir, characterized by an ideal microclimate for aromatic vines.

Tasting notes

Moscato Rosa "Praepositus" 2021 presents itself with a bright garnet color. On the nose, it releases a fruity bouquet with aromas of dried figs, peach and black berries, accompanied by floral notes of rose and a light touch of bitter chocolate and coffee. On the palate, the wine is sweet and fresh, with a harmonious structure. The finish is long and aromatic, characterized by a pleasant persistence that enhances the fruity and floral notes, offering a complex and refined sensory experience.

Pairings

This sweet wine pairs perfectly with rich and structured desserts such as chocolate fondant or Sacher cake, where the sweetness of the Moscato Rosa balances the intensity of the chocolate. It is also excellent with berry tarts or red fruit strudel, thanks to the freshness that contrasts with the sweetness of the dessert. For a more daring pairing, try it with venison, to create a harmonious contrast between the intensity of the game and the sweetness of the wine.

Production method

The Moscato Rosa grapes are harvested manually, selecting the best bunches to guarantee the quality of the product. Fermentation takes place in stainless steel, with maceration on the skins for 5 days, in order to best extract the colors and aromas of the vine. Subsequently, the grapes are pressed and fermentation continues in steel until reaching the desired alcohol content. The wine is then left to mature for 14 months in stainless steel, followed by 9 months of refinement in the bottle. This long maturation process allows us to preserve the freshness and elegance of the wine, enriching it with complexity and an aromatic finesse that characterize it.
