Sidera is the line of Classic Method Apple Blood Cider, inspired by the Latin term of the same name which means stars. The apples at the base of this cider, grown organically, are Pinova and Granny Smith: the first gives great aroma, while the second counterbalances it with a marked acidity.

Note di degustazione
Lively, brilliant straw yellow, with dense and persistent perlage. It has aromas of ripe apple, bread crust and yellow stone fruit. On the palate it is very dry and fresh, with savory and spicy notes of aging perceivable in a very defined way, with good persistence.

Metodo di produzione
After harvesting and pressing, the musts, with the addition of yeasts, rest for several weeks in steel tanks. Subsequently, they are assembled into a refined cuvée, which continues refinement in the bottle for a minimum period of 12 months. After this period we proceed with the daily remuage, rigorously carried out by hand. This process allows the yeasts to settle in the neck of the bottle, thus preparing the next phase of disgorgement, possible topping up and corking the bottle.
