The intense flavor of wild rocket is mastered by an ancient local variety of courgette that Elisa grows in her mountain garden. The officinal mint from the company fields gives a fresh and pleasant note that complements the softness of the almonds .

The history of this historic courgette is moving and deeply linked to the Great War which affected our valleys. Elisa says: "I believe that it is very significant in the current production model to make room for varieties linked to the territory and together become the custodians of these extraordinary ancient seeds."

Ingredients: ancient courgette Soldà variety (of the soldier), EVO oil, wild rocket ((Diplotaxis tenuifolia (L.) DC.), almonds, lemon juice, peppermint (Mentha x piperita L.), garlic, whole sea salt , pepper.
