The first in Trentino to be recognized as a Slow Food Presidium in 2021, the organic honey from high mountain flowers "Miel da Mont" is a rarity and gastronomic excellence that has been born in the summer at 1875 meters above sea level for 40 years . It is a raw, unique and precious honey that combines the beneficial properties of plants from Val di Fassa.

“Miel da Mont” is produced from multiple types of flowers; it is a natural antibacterial rich in minerals and antioxidants that is used to energize and purify the body . In 2022, for example, the 30 hives of Ciasa dò Parè produced around 100 kilos of honey and the numbered jars for this year were only 430. While in 2023, an extremely favorable year, as many as 1400 jars were numbered!

Tasting notes

Notes of rhododendron, light and delicate taste. The flavor is characterized depending on the area, the period and the type of flowers that the bee collects. Both the flavor and the color change from year to year.

Pairings

Excellent to enjoy for breakfast or as a snack on warm bread, with hot but not boiling herbal teas and with raw milk cheeses. It can also be used to nourish the skin and hair with natural compresses or masks.

Production method

This honey is produced at high altitude, bringing the hives above 1850 metres: 18 at the Flora Alpina refuge in Falcade, 18 in Val Ceremana, a natural paradise in the Trentino Dolomites.
The transhumance of bees is a ritual that is repeated every year: a window of at least four days of favorable weather is identified, the hives are closed and brought to the mountain hut at non-canonical times, when not only the bees, but the entire Alpine world still sleeping.
Bees travel above 12°. This is why they produce less in the high mountains: they go out later in search of pollen and return earlier in the evening, due to the lower temperatures. To feed themselves, they still need 3 kilos of honey a day. Considering that in case of bad weather they will not come out at all, you can only count on overproduction for the harvest. This is why high mountain Alpine honey is so precious, as well as for its extraordinary qualities.
