Antica Quercia is a winery located on the splendid Scomigo Hills, one of the most renowned areas of the Conegliano-Valdobbiadene Prosecco Superiore DOCG denomination. The “Rive” represent the vineyards cultivated on the steepest and most suitable hills, where viticulture becomes a true art, and the soils give the grapes unique characteristics of freshness and minerality. The production philosophy of Antica Quercia is deeply rooted in respect for the environment and in enhancing the territory, using sustainable practices. Note di degustazione
Matiù Brut has a bright straw yellow color and a fine and persistent perlage. Delicate notes of fresh fruit stand out on the nose, such as green apple and pear, with floral hints of white flowers and light citrus notes. On the palate it is fresh, well-balanced and lively, with a pleasant acidity that makes it extremely versatile. The finish is dry, clean and with a fruity persistence.

This Prosecco Superiore is the ideal accompaniment for light seafood dishes such as shrimp in pink sauce, tuna tartare or octopus salads. Its freshness makes it perfect with creamed cod crostini or white fish carpaccio. Try it also with vegetarian dishes such as grilled vegetables and citrus salads. Also excellent with fresh cheeses such as burrata or goat cheese.

Metodo di produzione
The grapes are harvested manually in crates, ensuring a careful selection of the best bunches. After a soft pressing of the whole grapes, the fermentation takes place in stainless steel tanks at a controlled temperature, to preserve the aroma and freshness of the vine. This is followed by the refinement on the yeasts throughout the winter with subsequent secondary fermentation in the spring of the year following the harvest.
