Immersed in the greenery of Drena, a small Trentino village dominated by the suggestive medieval castle, Cantina Salim represents the union between tradition and innovation. The Bortolotti family, who runs the winery, has deep roots in the territory, with a relatively recent history as artisans of wine and spirits.

From the beginning, the mission of the winery has been to enhance the authentic identity of the Trentino valleys through production that respects the environment and local traditions. Located in an area characterized by variable altitudes and an ideal microclimate, the Salim Winery benefits from perfect conditions for growing fine grapes.

The winery's philosophy is based on a deep respect for nature, adopting sustainable and artisanal practices in every phase of production. The pomace used for the spirits comes exclusively from the estate's vineyards, cultivated according to principles of biodiversity and harmony with the environment.

"Brume di Salim" presents itself with a crystalline white color and intense aromas. On the palate, it offers a young structure with a flavor rich in fragrance and fruity notes, reflecting the typical aromas of Chardonnay and Pinot Noir pomace.

    Ideal for accompanying biscuits and sweets with a fragrant consistency at the end of a meal, this grappa is an excellent digestive. Thanks to its complex aromas, it can also add a creative and unexpected touch to sophisticated cocktails.

  • Metodo di produzione

    The pomace of Chardonnay and Pinot Noir, resulting from the pressing of the grapes grown in the cellar, represents the essential basis for the production of "Brume di Salim". After the harvest, the pomace is left to ferment in dedicated containers, where the sugars are naturally transformed into alcohol. Once this phase is completed, the distillation takes place in a traditional still heated in a bain-marie. This delicate process allows the alcoholic part to be isolated, while preserving the intense aromas and scents that tell the authentic essence of the Trentino territory.
