Maison Mouzon-Leroux is a historic family business located in the heart of the Montagne de Reims, in the Verzy region, one of the few villages classified as Grand Cru in Champagne . Founded on tradition and innovation, the Mouzon family follows biodynamic practices to produce Champagne that reflect the authenticity of the Verzy terroir, renowned for its chalky soils and the favorable exposure of its vines, which give the wines an extraordinary freshness and minerality.

Tasting notes

"Et Sans Ciel" presents itself with a golden-copper color, fine and persistent perlage. On the nose, elegant aromas of green apple, pear and citrus emerge, with a touch of almond and yeast. On the palate, the wine is structured and complex, with a lively acidity and a long mineral finish that leaves a pleasant freshness.

Pairings

This Champagne pairs perfectly with a scallop carpaccio served with a drizzle of extra virgin olive oil and pink pepper, or with a seafood risotto, where the freshness of the wine balances the creaminess of the dish. A pairing with sushi and sashimi is also ideal, where the vivacity of the Pinot Noir enhances the delicacy of the raw fish.

Production method

Produced with 100% Pinot Noir grapes from biodynamically grown Grand Cru vineyards, "Et Sans Ciel" is vinified with indigenous yeasts and fermented in oak barrels (no malolactic). The prolonged maturation on the lees from 24 to 30 months gives the wine greater aromatic complexity and a creamy texture. Attention to detail and respect for nature are the cornerstones of the production philosophy of Maison Mouzon-Leroux.
