During the flowering of the elderberry, it was traditional for the farmers of South Tyrol to prepare a sparkling Hollerwein (elderberry wine), which was already consumed during fermentation. From this peasant tradition was born the idea of ​​valorising the products of the earth through this fresh and thirst-quenching apple cider.
