Tasting notes

The 1607 Rosè Extra Dry has a pale pink color and a fine and persistent perlage. On the nose it offers delicate aromas of red fruits such as wild strawberries and raspberries, accompanied by light floral notes of rose and peony. On the palate it is fresh and lively, with a light sweetness balanced by a bright acidity. The finish is clean and fruity, with a pleasant persistence.

Pairings

This extra dry rosé is perfect as an aperitif, accompanied by finger foods such as bruschetta with cherry tomatoes or smoked salmon canapés. Thanks to its freshness, it pairs perfectly with raw fish dishes such as tuna tartare or red prawns, or with seafood salads and white fish carpaccio. Try it also with vegetarian dishes such as fresh salads, vegetable risottos or fresh cheeses such as burrata, for a light and refreshing combination.

Production method

The grapes are harvested by hand and subjected to a light pressing to extract the delicate aromas and the pale color of the wine. Fermentation takes place separately for Chardonnay and Pinot Noir, for both at a controlled temperature in steel tanks, to preserve the freshness and aroma of the vines. After the first fermentation, a second fermentation in an autoclave follows according to the long Charmat method, which gives the wine its characteristic effervescence and lightness, enhancing the elegance of Chardonnay and the fullness of Pinot Noir.
