Founded in 1142, Novacella Abbey is one of the oldest wineries in South Tyrol, with a thousand-year history linked to viticulture. Over the centuries, 58 Abbots have succeeded one another at the helm of the Abbey, and the Praepositus line, a symbol of excellence, is dedicated to them. The wines of this line, including the 2021 Kerner Passito, are produced with carefully selected grapes from vineyards located in the best exposures, at altitudes between 600 and 900 meters. These altitudes and the cool climate of the Isarco Valley, together with the mineral soils, create ideal conditions for the drying of the grapes, giving the wine a unique and refined character.

Tasting notes

The Kerner Passito "Praepositus" 2021 presents itself with a bright golden color and an aromatic bouquet rich in notes of dried fruit, honey, dried apricot and delicate spices. On the palate, it stands out for its sweetness balanced by a lively acidity, which makes it fresh and harmonious. The finish is long and persistent, with a complex layering of flavors of ripe fruit and spices.

Pairings

Try it with spicy gorgonzola and dandelion honey.

This passito pairs beautifully with desserts such as dried fruit cakes, tarts or almond biscuits. Thanks to its balanced sweetness, it is also ideal with blue cheeses, such as spicy Gorgonzola, where the saltiness of the cheese is balanced by the fruity notes and honey of the wine. It is also perfect with creamy desserts, such as panna cotta or crème brûlée, where its refreshing acidity complements the softness of the dessert.

Production method

Kerner grapes are harvested manually, selecting only the best bunches to ensure the highest quality of the wine. After pressing, fermentation takes place in stainless steel tanks for a period of 2-3 months. Subsequently, the wine ages for 12 months, again in stainless steel, to preserve its freshness and aromatic integrity. After this refinement, the wine is bottled and rests for a further 5 months in the bottle, before being marketed, allowing for greater complexity and harmonization of flavors.
