Today I will take you to a small hilly paradise known throughout the world for its sparkling wine with fruity and floral notes: VALDOBBIADENE .
I recently had the opportunity to visit the Andreola Company , in Col San Martino, a family-run business founded in 1984 by Nazzareno Pola, who for the occasion prepared a delicious risotto with complete serenity!
Today his son Stefano carries on the company, maintaining high quality standards in the production of their wines.
The vineyards are on hills with slopes of up to 70% , where totally manual work is facilitated by terrace and step systems.
For the Conegliano-Valdobbiadene DOCG, Glera is mainly used, the most widespread variety in Veneto , together with native varieties such as Perera, Verdiso and Bianchetta.
Thanks to the favorable exposure and altitude of the vineyards, the geological richness of the soil and the expert winemaking techniques, mostly EXTRA DRY sparkling wines are created, characterized by aromas of pear, apple, citrus fruits, white flowers and wisteria .
The most intriguing expressions , for me, are found in the modern BRUT and EXTRA BRUT versions. These wines are produced from grapes coming from the RIVE , i.e. vineyards located on steep slopes, which accentuate their nuances , such as citrus and vegetal ones, as well as having an incredible flavor .
